In 1981, Michel Bras, a French chef with 3 Michelin stars, created the famous dessert known as “Biscuit de chocolate coulant”. It was in his restaurant, Laguiole, where he first presented this little chocolate treat. The original recipe is made up of two types of batter: chocolate sponge cake on the outside with a heart of chocolate ganache. Diners will be amazed when they cut this dessert open and release a volcanic eruption of chocolate sauce from inside the sponge.

Michel Bras also makes versions of this coulant with different sauces in the centre, such as raspberry, coffee and chestnut cream.
